Herb Salads

Parsley Salad

This is one of my favorite herb salads and is great with soups, roasted or grilled meats and on green salads of all sorts.

2 cups chopped parsley

3 scallion, washed and chopped finely

Juice from 1/2 a lemon

1 TBS good olive oil

Sea salt to taste

Mix everything together.  Let sit about 20 minutes before serving so that the flavors combine.


Cilantro Salad

This is great with fish, tacos or burritos, or as a topping for guacamole.

2 cups chopped cilantro

1/4 cup chopped mint leaves

1/4 cup very finely chopped red onion

Juice of one lime

1 TBS olive oil

Sea salt to taste
